The sugar is commonly used to make traditional decorative sweets called “higashi”, and this experience provides a hands-on introduction to making them. A lot of commercial sweets are produced in factories, so enjoy the rare opportunity of a sweet-making class by a traditional craftsman, using carved wooden molds.
